To make these romantic handheld pies, get started by preparing the dough. In a large mixing bowl, combine whole wheat pastry flour, canola oil, unsweetened almond milk and water. Mix well by hand until you have a firm dough. After you’ve finished mixing up your high fiber pastry base, set it aside and create your filling. In a medium saucepan, combine berries and lemon juice. Bring the mixture to a boil, then reduce the heat and allow your berry filling to simmer for about five minutes. Turn off the heat and stir in chia seeds and corn starch, which will help to thicken up the filling. Allow your berries to sit for about five minutes.

Now that the two main components of the recipe are completed, it’s time to compose your love letters. Place your pastry dough on a floured surface and roll it out using a floured rolling pin. Slice the rolled-out dough into diamonds and cut mini hearts out of the extra pastry. Place the pieces on a parchment-lined baking sheet and spoon a dollop of pie filling into the center of each. Fold three corners of the dough to the center and press down lightly to seal. Place a heart in the center of each one to complete your envelopes and brush them lightly with egg whites and a sprinkle of sugar. Ingredients:

  • Pie Dough
  • 2 ½ cups whole wheat pastry flour
  • ¼ cup canola oil
  • ½ cup unsweetened almond milk
  • ¼ cup water
  • 1 egg white
  • 2 tsp. white sugar
  • Pie Filling
  • 2 cups berries
  • 1 Tbsp. lemon juice
  • 1 Tbsp. chia seeds
  • 1 tsp. corn starch

Directions:

  1. Prepare the pie dough by mixing together flour, oil, milk and water. Mix well by hand until you have a firm dough.
  2. To make the pie filling, combine berries and lemon juice in a medium pan. Bring to a boil, then reduce the heat to a simmer for about 3-5 minutes. Turn off the heat anda add in chia seeds and corn starch. Set aside to thicken for about 5 minutes.
  3. Place the dough on floured surface. Flour a rolling pin and roll out the dough to about 1/8 to 1/4 inch thick.
  4. Cut dough into 4 x 4-inch diamonds. Cut out mini hearts as well. Place them on a parchment-lined baking sheet.
  5. Fill each square with a dollop of pie filling.
  6. Fold three corners of the dough and press down lightly to seal. Place a heart at the center of each dough.
  7. Brush envelopes with the egg white and sprinkle with sugar.
  8. Bake at 450°F for about 15 minutes or until golden.
