Who doesn’t love starting their day with pancakes? They’re a breakfast classic, a delicious childhood favorite, and the ultimate treat to start your day. But the thing about pancakes—they often pack in the calories, unhealthy breakfast carbs, add-ons and are all together a diet no-no. But what if we had our team of recipe developers whip up a Nutrisystem-approved, lightened-up version of this go-to breakfast? And what if we made them in a muffin tin for easy eating on the go? You’re in luck—we’ve got a Mini Pancake Bites recipe that will keep your waistline intact and your breakfast carb cravings at bay.
So, what makes this Mini Pancake Bites recipe diet-friendly? We’ve made a few simple swaps that make this recipe healthier than your average pancake. And the best part about it? You won’t even notice that this recipe is a lightened-up version of the classic cakes!
Let’s dive right into these Pancake Bites—literally and figuratively speaking because we cannot wait to eat these mini flapjacks up. Grab a mini muffin tin and gather your ingredients. To whip up this delicious (and super simple) breakfast recipe, you’ll need whole wheat flour, baking powder, baking soda, nonfat milk, an egg, coconut oil, cinnamon and your toppings of choice (we’ll get to that part later!).
To start, preheat the oven to about 400 degrees. Spray the mini muffin tin cups with zero-calorie nonstick cooking spray. In a large bowl, thoroughly combine flour, baking powder and baking soda. Once combined, evenly stir in milk, egg, coconut oil and cinnamon. Mix the ingredients until a batter is formed. Once the pancake batter is smooth, evenly distribute the batter into each mini muffin cup. Top the Mini Pancakes with blueberries or your topping of choice before you pop them in the oven, or if you’re like us, wait until these delicious Mini Pancakes bake for 10 minutes, remove them from the oven and top with berries.
The Leaf Pro Tip: Get creative and make each bite unique by using a variety of different toppings! Chocolate lover? Add some stevia-sweetened mini chocolate chips. Prefer strawberries? Make the swap! Unsweetened dried coconut flakes, nuts, seeds or chopped would all make delicious additions. Just makes sure to keep track of any extras that you add.
