Ingredients:

  • 1 cup carrots, chopped
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 1 green bell pepper, diced
  • 1 cup lentils, dry
  • 1 cup sweet potato, peeled and diced
  • 3 cloves garlic, minced
  • 1 ½ tsp. ground coriander
  • 1 ½ tsp. cumin
  • 1 tsp. curry powder
  • ½ tsp. paprika
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • ½ tsp. turmeric
  • 4 cups vegetable broth, low sodium
  • 2 ½ cups kale, chopped
  • ¾ cup pumpkin seeds

Directions:

  1. Place all ingredients except for the kale and pumpkin seeds into a slow cooker.
  2. Cook on high for 4-6 hours.
  3. Once finished, stir in the chopped kale garnish with pumpkin seeds (~2 tablespoons per bowl).
