Ingredients:

  • 4 cup shredded Brussel sprouts
  • 2 cups kale, finely shredded
  • 1 cup edamame, deshelled
  • 1 cup cooked quinoa
  • ½ cup sliced almonds
  • ½ cup shaved parmesan cheese
  • Dijon Dressing
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. olive oil
  • ¼ cup lemon juice
  • 1 Tbsp. honey
  • 1 tsp. garlic, minced
  • Salt and pepper, to taste

Directions:

  1. In a salad bowl, toss together salad ingredients.
  2. In a separate bowl, whisk together the dressing ingredients. Pour on top of salad.
