4-Ingredient Coconut Lime Energy Bites

We’re putting the lime in the coconut with these no-bake energy bites that contain just four simple ingredients. Stay out of the heat while whipping up a sweet summertime treat!

Coconut and lime are two very distinct flavors that stand out in any recipe they are featured in. This recipe starts the same way most energy bites begin—in the food processor! Place one cup of pitted dates into your food processor and process until they are broken down. Add in half of a cup of cashews, two tablespoons of unsweetened shredded coconut and the zest and juice of one lime. Continue to process until the mixture reaches your desired texture. Once blended, use a tablespoon to scoop out the mixture. Roll it into 12 equal-sized balls. Roll the bites in the remaining one tablespoon of shredded coconut and store them in the fridge. Ingredients:

  • ½ cup cashews
  • 1 cup pitted dates
  • 3 Tbsp. unsweetened shredded coconut
  • 1 lime, juiced and zested

Directions:

  1. Place the dates into a food processor and process until broken down.
  2. Add in the cashews, 2 tablespoons of coconut, lime zest and juice. Continue to process until the mixture reaches your desired texture.
  3. Once blended, use a tablespoon to scoop out the mixture. Roll it into 12 equal-sized balls. 
  4. Roll the bites in the remaining shredded coconut.
  5. Store in the fridge.
