Matcha adds more than an emerald hue to these blueberry baked goods. According to Healthline, this powerful ingredient is derived from the same plant as green tea, which has been shown to promote weight loss. It is also high in antioxidants and is said to protect the heart and liver. Matcha contains caffeine, so keep this in mind if that is something you try to avoid. In addition to bringing the health benefits of matcha to your table, these muffins are also free of added sugar and are sweetened naturally with applesauce and blueberries.

To make these matcha muffins, preheat your oven to 350 degrees and prep a muffin tin with nonstick cooking spray or liners. Grab a large bowl and combine dry rolled oats, baking powder, whole wheat flour, matcha powder and baking soda. In a separate bowl, mix together two eggs, almond milk, unsweetened apple sauce and coconut oil. Add the wet ingredients to the dry ingredients, then fold in blueberries. Pour your batter into the muffin tin and bake for 20 to 25 minutes.

Ingredients:

  • 1 cup rolled oats, dry
  • 1 cup whole wheat flour
  • 1 ½ tsp. baking powder
  • 1 ½ tsp. baking soda
  • 1 Tbsp. matcha powder
  • 2 eggs
  • ½ cup unsweetened almond milk
  • 2 Tbsp. coconut oil
  • ½ cup unsweetened applesauce
  • 1 cup blueberries

Directions:
