We also mix in unsweetened cocoa powder, coconut oil, egg whites, vanilla, almond extract and slivered almonds for a healthy biscuit that fits into your weight loss program. Biscotti is typically a mild cookie with very little sweetness. However, if you’ve got a sweet tooth, feel free to sprinkle a little stevia on top while your cookies are cooling.

On Nutrisystem, Count As: 1 PowerFuel and 1 Extra

Ingredients:

  • 1 ¼ cup blanched almond flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • 2 Tbsp. coconut oil, melted
  • 2 egg whites, separated
  • ½ tsp. vanilla extract
  • 1 tsp. almond extract
  • ¼ cup sliced almonds

Directions:

  1. Preheat oven to 350°F. Line a cookie sheet with parchment paper.
  2. Mix together almond flour, cocoa powder and baking powder.
  3. In a separate bowl, mix together coconut oil, 1 egg white, vanilla and almond extract.
  4. Add wet ingredients to dry ingredients and mix until well combined.
  5. Stir in sliced almonds.
  6. Form dough into a log that's about 4 inches wide and 1 inch thick.
  7. Mix the second egg white with a dash of water and brush the top of each cookie.
  8. Bake for 20-25 minutes.
  9. Remove from oven anad let cool for 15 minutes. Reduce oven temperature to 300°F.
  10. Once cooled, cut the log into about 10 1-inch cookies. Return to the oven and bake for another 20-30 minutes (30 for crunchy, 20 for less crunchy).
  11. Remove cookies from the oven and let them cool on a wired rack for 30 minutes.
