Ingredients:

  • ¼ cup brown rice, cooked
  • ½ cup edamame, shelled
  • ¼ cup sliced mushrooms
  • ¼ cup grated carrots
  • 1 mandarin orange (or ½ cup canned in water)
  • 1 scallion, sliced thin
  • Sprinkle of sesame seeds
  • Ginger Dressing
  • ½ Tbsp. ginger, grated
  • 1 garlic clove, minced
  • 1 Tbsp. rice vinegar
  • 1 tsp. sesame oil
  • 1 Tbsp. water
  • 1 tsp. tahini

Directions:

  1. In a food processor or blender, combine ginger dressing ingredients and process until smooth.
  2. In a bowl, add in rice, edamame, mushrooms, carrots, orange segments and scallion.
  3. Drizzle ginger dressing and sprinkle sesame seeds on top.
