How to Make Mexican Street Corn

Whip up delicious corn on the cob in a snap with your favorite countertop appliance, the air fryer! There’s no waiting for water to boil in this healthy corn recipe.

Simply preheat your air fryer to 400 degrees and spray the air fryer basket with cooking spray. Place the corn inside, spray them with the cooking spray and cook for about 14 minutes. Make sure to turn them over halfway through the cooking time!

While your corn is cooking up, mix up a creamy Mexican street corn sauce by combining light mayonnaise, lime juice and spices. Our Mexican Street Corn seasoning blend includes garlic powder, chili powder, paprika and black pepper. However, feel free to tweak it to your taste buds!

Ingredients:

  • 4 ears of corn
  • ½ tsp. garlic powder
  • ½ tsp. chili powder
  • ½ tsp. paprika
  • 1 pinch of black pepper
  • ½ lime, juiced
  • ¼ cup light mayonnaise
  • 2 oz. cotija cheese, crumbled
  • 2 Tbsp. cilantro, chopped
  • Zero-calorie cooking spray

Directions:

  1. Preheat air fryer to 400°F.
  2. Spray air fryer basket with zero-calorie cooking spray. Add corn and spray corn with the cooking spray. Cook for 14 minutes, turning halfway through the cooking time.
  3. In a small bowl, mix together the mayonnaise, chili powder, garlic powder, paprika, black pepper and lime juice. Spread mixture onto a plate.
  4. When corn is finished cooking, roll each ear of corn in the mayonnaise spread.
  5. Sprinkle the cotija cheese and cilantro on top of the corn before serving.
